Green Beans – Green beans or some people call it string beans, is crunchy vegetable that is also sweet and juicy. Almost every Asian restaurant has these green beans in the menu with so many variations.
Salt and pepper – If you like to add cooking wine, it will be even more delicious! But this is optional. Some people can’t put any alcohol in the food, so it’s okay to not put any into it.
Cooking wine – Since this is a Chinese dish, it is best you use Chinese cooking wine. But if you have white wine, it is also fine.

Variations

How to Make
STEP 1. First, wash clean your green beans. Cut both ends, slice them according to your preference. I like to slice them slanting in 1 – 2 cm, so it has sharp edges. (image 1, 2)
STEP 2. Heat the wok and pour in some cooking oil. Let the oil heat up until you can see some smoke. Put in the crushed garlic (Images 3, 4). Sautee the garlic until it is a bit golden brown.
STEP 3. Put in the sliced green beans (Image 5). Stir fry until they look a little darker in color. Pinch some salt and stir into the green beans (Image 6).
STEP 4. Sprinkle some cooking wine (Image 7). I would recommend white wine so the flavor will be stronger. Stir fry. Please keep in mind, white wine is optional. Use water instead for those who can’t use wine. Cover with lid for one minute to cook up the green beans.
STEP 5. Take off the lid. Create a space in the middle by pushing aside all the green beans. Pour in the eggs (Image 8). Let the heat cook up the eggs first, leave it unstirred. This way you will get big chunks of eggs.
STEP 6. Use the spatula to break the egg yolks, but still let them remain untouched for a while. (Image 9)
STEP 7. After one minute, stir to let the eggs mix with the green beans. Push the green beans to the center. Put in the remaining salt and then pepper (Image 10). Stir fry until the eggs are all cooked up (Images 11, 12). Turn off the stove and serve in a nice plate. Enjoy!

- Cut the green beans 1 cm width and slating to make it look more attractive.
- If you like big chunks of eggs, let the eggs cook for a while, stir once in a while.

Storage
If you have some leftover, keep this dish in a closed container for up to 2 days. The next day you can stir fry it again, there might be some water coming out from the green beans. Dry them out on the pan.
