Who doesn’t like ube mochi pancake? I know it is super easy to make. Just buy Ube Mochi Premix from Trader Joe’s and follow the instructions in the box description and you have it in front of you.

Make a healthier version of ube mochi pancake at home. You can adjust the sweetness and you can choose a better version of all the ingredients.

I have tried this recipe at home. I even made a step by step video to show you how easy it is! The ingredients are all very natural.

How is ube mochi pancake different from ordinary pancake? Its vibrant color is number one reason I choose ube mochi pancake over the ordinary pancake. Its sweetness is just right and very chewy due to the ube texture and glutinous rice flour. And the fragrant that comes from the ube halaya is really so exotic!

Ube Or Purple Yam

Ube is purple yam, root type vegetable you can find in the Philipines, Japan, South East Asia countries. It is also called purple sweet potatoes. There are so many amazing recipes that can be made from ube.  It also has a lot of health benefits inside.

Purple sweet potatoes are different from Taro. Taro is also root vegetable but its texture is different. There are differences between purple sweet potatoes and taro that you can see here.

Purple sweet potatoes can be made into ube jam, ube macaron, or even ice cream. All are so tempting, so delicious!

Glutinous Rice Flour / Sweet Rice Flour

The flour that you must use here is glutinous rice flour. This flour gives the chewy texture you can’t find in ordinary pancake.

Glutinous rice flour is easy to find. You can just go to Asian grocery store or purchase it online on Amazon.

It is also called sweet rice flour.

This flour is amazing, you can make a lot of nice Asian dessert with it. It gives food chewy and fluffy texture.

Another great thing about glutinous rice flour is it is gluten free! Even though the name suggests glue-like and sticky, it doesn’t contain gluten. For those with celiac disease, it is good news!

Coconut Milk

For the liquid ingredient, use coconut milk. It is available in any supermarket. Coconut milk adds the nutty flavor in the pancake.

However, if you don’t like coconut flavor, you can use whole milk, instead. But it will be different. Using coconut milk adds richness to the flavor and texure.

When you use coconut milk as the main liquid ingredient, it makes the pancake more fragrant, because ube and coconut milk are very perfect together. It gives out nutty flavor to the pancake.

Eggs

Eggs are important ingredients. Try not to skip it. It adds the fluffiness to the pancake.

Vanilla Extract

Actually ube itself has vanilla kind of fragrance, but when you add vanilla extract, it strengthens the natural vanilla flavor in ube.

Ube extract comes in 2 choices: powder and paste. Both enhance the flavor of the ube mochi pancake. Paste gives deeper color to the pancake batter.

Ube Halaya

This is one important ingredient in any ube variations. If you want to have a homemade ube halaya, there is a recipe I made in this article.

If you like the taste of ube halaya, I suggest you make one jar to keep at home with this recipe. There are lots of nice desserts you can make with ube halaya; homemade ice cream, cookies, cake, etc.

Organic Palm Sugar

You can use light brown sugar or dark brown sugar to add sweetness to the pancake. This time I use organic palm sugar because  I love the wonderful smell of palm sugar. Try it yourself, it will make the batter even better!

There is also coconut sugar available which looks almost like palm sugar. Try it!

I have organic palm sugar available here in my kitchen. And my friend owns a palm sugar factory, I have had the chance to visit his factory once and I loved their non-chemical process. I always keep some in my kitchen.

Unsalted Butter

Butter will make the pancake moist and fluffy. If you only have salted butter, do not put in the salt. I prefer using unsalted butter for making cakes.

Salt

Like I mentioned before, if you use salted butter, skip the salt.

If you use unsalted butter, any salt is okay. I always use sea salt at home. Salt brings out the flavor of other ingredients. Just a pinch of ¼ tsp is enough.

Baking Powder

This will help to rise the batter and adds fluffiness to the pancake. You can use double active baking powder or just a normal one will do.

Ube Mochi Pancake Recipe

  • 55 gr organic palm sugar
  • 2 tbsp melted unsalted butter
  • 2 eggs
  • 200 ml coconut milk + 140 ml water
  • 1 tsp vanilla extract
  • ½ tsp ube extract powder
  • 60 gr ube halaya
  • ¼ tsp salt
  • 280 gr glutinous rice flour
  • 2 tsp baking powder

Baking Instructions:

  1. Combine all ingredients: organic palm sugar, eggs, salt, vanilla extract, coconut milk, ube extract powder, ube halaya, baking powder, glutinous rice flour in one bowl.
  2. Stir using a whisk or spatula and mix well until thick batter forms. The batter should be thick and purple.

  1. Add melted butter into the batter. Whisk well.

  1. Let the batter rest for half an hour. Cover with a cloth or cling wrap.
  2. After half an hour, the batter should have risen up. Tap with a spatula to let the air out.
  1. Heat some butter on a nonstick pan with low heat. You can use a small ladle to spoon the batter. Pour the batter into the center of the pan.
  2. Cook for 1-2 minutes letting some bubble form in the center. You can flip it and press using spatula.

  1. You can also cover the pan with lid if you want to keep pores on the pancake, let it cook well in a closed pan. Transfer to a plate when it is cooked.
  2. Repeat the process until the batter is all finished. You should get 6-8 pancakes. Pour some maple syrup.

Storage and Shelf Life

Place them in an airtight container or ziplock bag, and they can be stored in the freezer for up to 2 months. Reheat them in a toaster or microwave when ready to eat.

The recipe I attached here is only for 6-8 pancakes, so hopefully you do not need to freeze the cooked pancake.

Ingredients

  • 30 gr organic palm sugar
  • 20 gr melted butter
  • 1 egg
  • 200 ml coconut milk
  • 1 tsp vanilla extract
  • ½ tsp ube extract/paste
  • 30 gr ube halaya
  • ¼ tsp salt
  • 150 gr glutinous rice flour / sweet rice flour
  • 1 tsp baking powder

Instructions

  1. Put in the glutinous rice flour and baking powder in a glass bowl.
  2. Pour in the organic palm sugar, salt, coconut milk, vanilla extract, ube extract powder, and egg.
  3. Whisk well.
  4. You may put in the ube extract paste if you think the color is not bright enough.
  5. Put in the melted butter.
  6. Whisk well.
  7. Cover with cloth and leave it for 15-30 minutes before cooking on the pan.
  8. Heat a non stick pan with low heat.
  9. Pour in 1-2 ladle of the batter.
  10. Let it cook for 2-3 minutes or until pores are appearing.
  11. Flip the pancake. And let it cook for another 2-3 minutes on the other side.
  12. Transfer to a plate. Stack it up.
  13. Pour maple syrup on top of the pancakes. Top it with your favorite ice cream and fruits.
  14. Enjoy!

Notes

If you want to use yeast, let the batter ferment for 30 minutes before cooking it. Yeast is optional.
