Prepare the cucumber. Cut the cucumber lengthwise and scoop out the soft center and seeds. Removing this watery section helps keep the drink’s flavor fresh and concentrated.
Blend with the mint. Add the cucumber and mint leaves to a blender or food processor. Blend until completely smooth.
Strain the cucumber juice. Pour the mixture through a fine-mesh sieve into a measuring jug. Press gently with a spoon to extract as much juice as possible. You may skip this step for a thicker drink with more cucumber pulp.
Add the sweetener. Pour the golden syrup into the bottom of a serving glass or pitcher.
