Lemongrass Pandan Tea is a refreshing drink in the summertime or during hot weather. It is easy to prepare and a wonderful drink to keep in the fridge.
Wash the pandan leaves and lemongrass stalk. Cut the pandan leaves and lemongrass stalks and leave them in a pot. Add in the rock sugar and water. You can use regular white sugar if you don't have any rock sugar. But rock sugar has mild taste of sweetness that is different from regular white sugar.
Set the pot on the stove. Turn on high heat. Cook until it boils. When it boils, turn to low heat. Simmering the leaves gently releases their flavor. Let it simmer for 40 minutes total or until you can see the lemongrass and pandan leaves change colors.
Turn off the stove. Sieve the lemongrass tea, let it cool down. Put into a bottle, chill it afterwards or add some ice cubes and enjoy!

Before brewing the lemongrass and pandan leaves, you need to wash them clean, especially pandan leaves. They tend to have some dirt at the roots, so you need to wash them thoroughly.
Smash the lemongrass root with a pestle or a big knife handle. This will enhance the fragrance and flavor even more.
If you can't find fresh lemongrass stalks or pandan leaves in your local supermarket, you can use dried lemongrass or dried pandan leaves. They will have the same flavor and aroma.
You can substitute rock sugar with regular white sugar, but it will be slightly different. I think rock sugar has milk sweetness that is different than regular white sugar.
