This easy watermelon juice recipe blends juicy watermelon with a few pineapple slices, fresh lime juice, and mint. It is light, fruity, and especially refreshing on a hot day.
Add the watermelon pieces to a blender and remove any visible seeds if needed. Add the pineapple pieces, mint leaves, and lime juice. If you want a sweeter drink, you can also add a little simple syrup.
Blend until the fruit is completely smooth and well combined. Pour the juice through a fine-mesh strainer for a smoother texture. Serve chilled or over ice.
Notes
Use ripe, sweet watermelon. Since the fruit provides most of the sweetness, a ripe watermelon will give you the best flavor without needing much, or any, simple syrup.
Start with a small amount of mint. Mint can become quite strong once blended, so add a little first and increase it only if you want a more pronounced mint flavor.
Adjust the lime juice to taste. If you like a brighter, tangier drink, add a little more lime juice after blending.
Add simple syrup only if needed. Taste the juice first. If the watermelon and pineapple are already sweet, you may not need any extra sweetener at all.
Strain for a smoother drink. A fine-mesh strainer removes excess pulp and gives the juice a lighter, cleaner texture.
Serve it very cold. This watermelon juice tastes best chilled or poured over ice, especially on a hot day.
