This watermelon juice recipe is one of those simple drinks I love making when the weather is hot. Fresh watermelon is blended with a few slices of pineapple, lime juice, and mint leaves, giving the drink a sweet, slightly tangy flavor with a fresh finish. It is easy to make, colorful, and especially nice served cold over ice.

Ingredient Notes
Watermelon – Use ripe, sweet watermelon for the best flavor. Remove the seeds if needed before blending.
Pineapple – A few slices add extra sweetness and a slightly tangy tropical flavor without overpowering the watermelon.
Lime juice – Adds brightness and balances the sweetness of the fruit. You can add a little more if you prefer a tangier drink.
Mint leaves – Give the juice a fresh, cooling finish. Start with a small amount so the mint does not dominate the fruit.
Simple syrup – Optional. If your watermelon and pineapple are already sweet, you may not need any at all. Add it only if you prefer a sweeter drink.
How to Make Watermelon Juice
STEP 1. Add the watermelon pieces to a blender and remove any visible seeds if needed (Image 1).
STEP 2. Add the pineapple pieces, mint leaves, and lime juice (Image 2). If you want a sweeter drink, you can also add a little simple syrup.
STEP 3. Blend until the fruit is completely smooth and well combined (Image 3).
STEP 4. Pour the juice through a fine-mesh strainer for a smoother texture (Image 4). Serve chilled or over ice.
Pro Tips
- Use ripe, sweet watermelon. Since the fruit provides most of the sweetness, a ripe watermelon will give you the best flavor without needing much, or any, simple syrup.
- Start with a small amount of mint. Mint can become quite strong once blended, so add a little first and increase it only if you want a more pronounced mint flavor.
- Adjust the lime juice to taste. If you like a brighter, tangier drink, add a little more lime juice after blending.
- Add simple syrup only if needed. Taste the juice first. If the watermelon and pineapple are already sweet, you may not need any extra sweetener at all.
- Strain for a smoother drink. A fine-mesh strainer removes excess pulp and gives the juice a lighter, cleaner texture.
- Serve it very cold. This watermelon juice tastes best chilled or poured over ice, especially on a hot day.
Serving Suggestions
Serve this refreshing watermelon juice in the afternoon with coffee buns, cranberry cream cheese bread, or a jar of coffee bean cookies or coconut macaroon for an easy snack. The fruity, tangy drink is especially nice with buttery or creamy baked goods because it keeps the whole snack from feeling too heavy.
You could also serve it with anpan bread, salt bread, Japanese cheesecake, mini sponge cakes, or marble cake. For something savory, light snacks such as chicken karaage or Japanese croquettes would also work surprisingly well.

Storage
Store leftover watermelon juice in a tightly sealed bottle or container in the refrigerator for up to 2 days. Give it a good shake or stir before serving, as the juice may naturally separate while it sits.
