How to Make Hainanese Chicken Rice

STEP 1. Heat the cooking oil in a skillet over medium heat. Add the ginger and garlic and sauté until fragrant (Image 1). Remove and discard the ginger and garlic once they are lightly golden and aromatic (Image 2).

Add the washed rice to the skillet (Image 3). Pour in the fish sauce and sesame oil (Image 4), then stir until the rice is evenly coated with the seasonings.

STEP 2. Pour in half of the chicken broth (Image 5) and continue stirring until the rice absorbs most of the liquid. This step allows the rice to absorb more flavor before cooking.

Transfer the rice mixture to the rice cooker pot and pour in the remaining chicken broth (Image 6). Cook according to your rice cooker’s regular white rice setting (Image 7). Once done, fluff the rice with a rice paddle before serving (Image 8).
