Ingredient Notes
Ground Pork – The best part of pork to use is the shoulder or collar part. It has quite enough fat in it but not too much fat. You can ask the butcher to grind them for you or you can toss it in your food processor at home or just buy the ground meat at the grocery store.
Mushroom – Any mushroom is fine, but I find that shitake mushroom is the most suitable with this recipe. If you use the dried shitake mushroom, soak it until it is soft enough to slice.
Noodles – Any kinds of noodles is fine. There are dried noodles or wet noodles available in grocery store. Just pay attention to the cooking instructions on the package.
Oil – use lard for the best option for the noodles. Oil will help disperse the sauce evenly throughout the cooked noodles.
